I had the opportunity to try both of them in my own recipes and they really gave them a kick that my whole family enjoyed! Here are a couple of recipes you can make and enjoy during the big football game:

Mexican Fiesta Dip:

I’ve been making this dip for many years, but I usually use Salsa. This time I used a Can of the Del Monte Petite Cut Diced Tomatoes with Chipotle Chilies and it really added a nice kick and flavor to it! This dip is perfect for your gathering and always is the first to be eaten up!

Ingredients:

• 1 & 1/2 lbs. Ground Beef
• 1 Block of Velveeta
• 1 Can of Del Monte Petite Cut Sliced Tomatoes with Chipotle Chilies
• 1 Package of Taco Seasoning
• 1 Bag of Tortilla Chips

Directions:

1. Brown ground beef in skillet
2. Add 1 Can of Del Monte Petite Cut Sliced Tomatoes with Chipotle Chilies and cook a couple minutes longer
3. Dice and heat Velveeta in a microwaveable bowl. Check every 2 minutes or so until completely melted
4. Add in meat mixture into the melted Velveeta bowl
5. Serve and eat with tortilla chips!

Mexican Enchiladas:

My family loves Mexican food, can you tell? They also love my Mexican Enchiladas and here is a great & simple recipe that I’m sure your whole family will enjoy too!

Ingredients:

• 1 lb. Ground Beef
• 1 Can of Del Monte Petite Cut Diced Tomatoes with Green Chilies
• 1 Large Can of Enchilada Sauce
• 1 Package of Shredded Cheese
• 1 Package of Flour Torillas
• 1 Can of Sliced Olives
• Sour Cream

Directions:

1. Heat oven to 350°
2. Brown ground beef in skillet
3. Add 1 Can of Del Monte Petite Cut Sliced Tomatoes with Green Chilies and cook a couple minutes longer
4. Cover bottom of glass bake pan with enchilada sauce (this helps the enchilada from sticking to your pan)
5. Fill tortillas with meat mixture and Cheese & roll up to place in pan
6. Cover with the remaining enchilada sauce
7. Spread the remainder of the shredded cheese on top
8. Add Sliced Olives
9. Cover with foil and cook for 20 minutes at 350°, then uncover and cook an additional 10 minutes until cheese melts
10. Serve with a dollop of sour cream!
