I had the opportunity to try both of them in my own recipes and they really gave them a kick that my whole family enjoyed! Here are a couple of recipes you can make and enjoy during the big football game:
Mexican Fiesta Dip:
I’ve been making this dip for many years, but I usually use Salsa. This time I used a Can of the Del Monte Petite Cut Diced Tomatoes with Chipotle Chilies and it really added a nice kick and flavor to it! This dip is perfect for your gathering and always is the first to be eaten up!
Ingredients:
- 1 & 1/2 lbs. Ground Beef
- 1 Block of Velveeta
- 1 Can of Del Monte Petite Cut Sliced Tomatoes with Chipotle Chilies
- 1 Package of Taco Seasoning
- 1 Bag of Tortilla Chips
Directions:
- Brown ground beef in skillet
- Add 1 Can of Del Monte Petite Cut Sliced Tomatoes with Chipotle Chilies and cook a couple minutes longer
- Dice and heat Velveeta in a microwaveable bowl. Check every 2 minutes or so until completely melted
- Add in meat mixture into the melted Velveeta bowl
- Serve and eat with tortilla chips!
Mexican Enchiladas:
My family loves Mexican food, can you tell? They also love my Mexican Enchiladas and here is a great & simple recipe that I’m sure your whole family will enjoy too!
Ingredients:
- 1 lb. Ground Beef
- 1 Can of Del Monte Petite Cut Diced Tomatoes with Green Chilies
- 1 Large Can of Enchilada Sauce
- 1 Package of Shredded Cheese
- 1 Package of Flour Torillas
- 1 Can of Sliced Olives
- Sour Cream
Directions:
- Heat oven to 350°
- Brown ground beef in skillet
- Add 1 Can of Del Monte Petite Cut Sliced Tomatoes with Green Chilies and cook a couple minutes longer
- Cover bottom of glass bake pan with enchilada sauce (this helps the enchilada from sticking to your pan)
- Fill tortillas with meat mixture and Cheese & roll up to place in pan
- Cover with the remaining enchilada sauce
- Spread the remainder of the shredded cheese on top
- Add Sliced Olives
- Cover with foil and cook for 20 minutes at 350°, then uncover and cook an additional 10 minutes until cheese melts
- Serve with a dollop of sour cream!
